Karlsruhe Nutrition Congress: Health Aspects of Vegetables and Fruit

The 10th Karlsruhe Nutrition Congress will focus on the health aspects of vegetables and fruits as well as on the recommendation to consume at least five servings of vegetables and fruits per day.

Recent epidemiological data indicate a rise in the incidence of obesity, the metabolic syndrome, and type 2 diabetes. Increasing vegetable and fruit consumption may significantly reduce the mortality associated with these diseases. Scientific data from epidemiological, clinical and experimental studies suggest that a high intake of vegetables and fruits is inversely associated with the risk of cardiovascular diseases and cancer. However, data from prospective studies leave the question of the value of vegetable and fruit consumption in cancer prevention open.
This Congress will provide the latest information on the relevant epidemiology, human intervention studies, mechanisms of risk reduction, and on programmes to increase the daily intake of vegetables and fruits. The Congress aims to substantiate the recommendation to consume 5-a-day.
