The aim of this international symposium, which takes place in a 2-year rhythm, is:
to offer a scientific platform for representatives from academia, industry, food authorities and policy,
to stimulate the presentation of up-to-date research activities,
to obtain information on new developments and
to exchange views with colleagues from many countries on scientific progress and applications.
The symposium will address various aspects of scientific research on:
• Functional Food (first day)
• Food Safety (second day)
with a focus on dairy products and seafood.
Internationally recognized experts will present plenary lectures:
• Prof. H.G. Kristinsson, Icelandic Food Research, Reykjavík, Iceland:
Functional food from marine resources
• Prof. R.J. FitzGerald, University of Limerick, Limerick, Ireland:
Bioactive peptides from food proteins
• PD Dr. L. Beutin, Federal Institute for Risk Assessment, Berlin,
Germany: EHEC in food - current state of knowledge
• Prof. A. Lopata, James Cook University, Townsville, Queensland,
Australia: Health risk of parasites in fish.
