Über Pathogenitätsmechanismen bei lebensmitteltoxikologisch relevanten Bakterienstämmen berichtet Prof. P. Steinberg von der Universität Potsdam. Dr. Kornelia Berghof-Jäger von der BioteCon Diagnostics GmbH in Postdam referiert über molekulare Diagnostik von pathogenen lebensmittelrelevanten Organismen. Mit der allergologischen Bedeutung und Nachweisverfahren von versteckten Allergenen in Lebensmitteln beschäftigten sich Prof. S. Vieths und Dr. T. Holzhauser vom Paul-Ehrlich-Institut, Bundesamt für Sera und Impfstoffe in Langen. Prof. U. Stahl von der TU Berlin leitet die Diskussion.
