Die Teilnehmenden erhalten eine fachliche Einführung in die Produktklasse der Stabilisatoren. Anschließend setzen sie Johannisbrotmehl in einem Eiskremrezept nach industriellem Vorbild ein, um die geschmackliche Wirkung zu vergleichen. Die Arbeit erfolgt in Teams mit unterschiedlichen Geschmacksrichtungen sowie brennwertreduzierten Rezepten (Fettaustauschstoff Inullin). Es werden Bonbons mit dem Zuckeraustauschstoff Isomalt hergestellt.
